INGREDIENTS
- 2/3 cup shortening
- 2 2/3 cups sugar
- 3 cups shredded zucchini
- 2/3 cup water
- 3 1/3 cups flour
- 2 teaspoons baking soda
- 1 1/2 teaspoons salt
- 1/2 teaspoon baking powder
- teaspoon cinnamon
- 1 teaspoon nutmeg
- 1/2 teaspoon ginger
- 2 teaspoons vanilla

DIRECTIONS
- Combine the shortening and sugar together before adding in the water, zucchini and eggs. And then add in the remaining ingredients then fill three lightly oiled pans with batter.
- Set your oven to 350 degrees F and then let it cook for seventy minutes.
