INGREDIENTS
2 eggs, beaten
1 3/4 cups skim milk
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 cup whole wheat pastry flour
1/2 cup flax seed meal
1/4 cup wheat germ
1/4 cup all-purpose flour
4 teaspoons baking powder
1 tablespoon sugar
1/4 teaspoon salt

DIRECTIONS
- Beat eggs, milk, oil, applesauce and vanilla into a large bowl. Stir in the whole wheat pastry flour, flax seed meal, wheat germ, all-purpose flour, baking powder, sugar and salt. Combine well until a smooth batter is formed.
- Turn the waffle iron on and spray with cooking spray.
- Pour the batter into the preheated waffle iron and cook until golden brown.
- Makes 6 servings
