    Warm Apple Almond Muffins

    Here’s a great recipe that would make use of those delicious apples you have growing in the garden.

    INGREDIENTS

    1 1/2 cups quick or old fashioned oats
    1 cup all-purpose flour
    2/3 cup brown sugar, firmly packed
    1/2 cup raisins
    1 teaspoon baking powder
    1 teaspoon salt
    1/2 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/4 teaspoon ground nutmeg
    3/4 cup applesauce
    1/3 cup apple juice or milk
    1 large egg, lightly beaten
    1 teaspoon almond extract
    2 tablespoons vegetable oil
    1/2 cup sliced almonds

    DIRECTIONS

    • Preheat oven to 400 degrees F. Arrange paper baking cups over 12 medium muffin cups or use vegetable shortening to grease the bottom of the cups.
    • Bring oats, flour, sugar, raisins, baking powder, baking soda, cinnamon, nutmeg and salt together in a large bowl, mixing well.$
    • Use a smaller bowl to blend applesauce with apple juice, egg, almond extract and oil. Once properly combined, add this with the dry ingredients. Mix well until moistened.
    • Spoon mixture into the prepared muffin cups by about 3/4-full. Top with sliced almonds and bake for 22 minutes.
    • Cool muffins while in pan and set over a wire rack. After 5 minutes, remove from pan and serve warm.
    • Makes a dozen muffins.
