    Special Banana Bread

    "Not your ordinary banana bread recipe. This one is truly special in flavor and texture."

    INGREDIENTS

    1 cup shortening
    2 cups white sugar
    6 very ripe bananas, mashed
    4 eggs
    2 1/4 cups all-purpose flour
    1 teaspoon salt
    2 teaspoons baking soda
    2 teaspoons ground cinnamon
    1 teaspoon ground cloves
    1 teaspoon freshly grated nutmeg
    1 cup chopped walnuts

    DIRECTIONS

    • Turn the oven on to 350 degrees F (175 degrees C). Coat two 9 x 5-inch loaf pans with non-stick cooking spray.
    • Soften shortening and sugar until light. Whisk in the eggs one at a time.
    • In a large bowl, sift flour together with salt, baking soda, cinnamon, cloves and nutmeg. Add mixture to the prepared shortening mix and combine well.
    • Mash the bananas well and blend it into the batter. Mix in the walnuts and transfer the batter into the prepared pans.
    • Bake for about 60 to 75 minutes at 350 degrees F (175 degrees C). Check every 15 minutes to prevent over baking.
    • Makes 2 large loafs
