    Plum Quick Bread

    It’s not everyday that we get to see a bread recipe that makes use of plum in its list of ingredients. Surprisingly it turns out to be a delightfully delicious combination especially with this recipe that tops the loaf with cinnamon-sugar and crunchy pecans.

    INGREDIENTS

    * 1 cup sugar
    * 1/2 cup packed brown sugar
    * 3/4 cup vegetable oil
    * 1 egg
    * 1 teaspoon grated lemon peel
    * 2 cups all-purpose flour
    * 1 teaspoon baking soda
    * 1/4 teaspoon salt
    * 1 cup buttermilk
    * 1 1/2 cups pitted, chopped plums

    TOPPING:
    * 2 tablespoons sugar
    * 2 tablespoons chopped pecans
    * 1/4 teaspoon ground cinnamon

    DIRECTIONS

    • Mix sugars well with oil, egg and lemon peel. In a separate bowl, mix flour, baking soda and salt. Add this latter mixture with the sugar mixture alternately with buttermilk. Mix in plums.
    • Transfer the batter onto two greased 8 x 4 x 2-inch loaf pans.
    • Mix the topping ingredients together and drizzle over the batter. Place the pan into the oven and bake at 350 degrees F for about 70 minutes.
    • Take it off the oven and cool for 10 minutes before taking the loaf out of the pans and into wire racks for thoroughly cooling.
    • Makes 32 servings.
