    Orange-Glazed Cranberry Pumpkin Bread

    Sweet pumpkin bread finished with a delicious tang of orange glaze. It’s perfect for any bread meal requirement of any time of day.

    INGREDIENTS

    3 1/2 c. all-purpose flour
    1 2/3 c. sugar
    2 tsp. each: baking soda and pumpkin pie spice
    3/4 tsp. salt
    1 tsp. baking powder
    1 (16 oz.) can whole berry cranberry sauce
    1 (16 oz.) can solid pack pumpkin
    3/4 c. chopped pecans
    2/3 c. vegetable oil
    4 eggs (2 eggs and 2 egg beaters work also)

    Glaze:
    1 c. powdered sugar
    1/4 c. undiluted orange juice concentrate
    1/8 tsp. ground allspice

    DIRECTIONS

    • Grease two 9-1/4 x 5-1/4 x 2-inch loaf pans.
    • Combine the first five ingredients in a large bowl.
    • Use another bowl to combine the remaining half of the ingredients. Add this to the first mixture until a well-moistened batter is achieved. Pour batter into the prepared loaf pans and set for 65 minutes of baking at 350 degrees F.
    • Allow bread to cool in pans for 10 minutes before moving them over to cooling racks for thorough cooling.
    • Meanwhile, prepare the glaze, mixing its ingredients in a small bowl until smooth. This makes 1/2 cup of glaze mixture.
    • Once cool, glaze the tops and sides of both breads.
    • Makes 2 loaves.
