I love oatmeal but it can get a bit weary when prepared in the same manner over and over. I found another way to enjoy my old time favorite ingredient in bread form.

INGREDIENTS
* 3 cups all-purpose flour
* 1/2 teaspoon salt
* 4 teaspoons baking powder
* 3/4 teaspoon baking soda
* 2/3 cup honey
* 1/4 cup margarine, softened
* 1 2/3 cups rolled oats
* 1 egg
* 1 1/4 cups grapefruit juice
* 1 cup chopped walnuts
|
DIRECTIONS
- Set oven to 350 degrees F preheat settings.
- In a large mixing bowl, sift flour together with salt, baking powder and soda.
- Use a moderate-sized bowl to combine honey with butter or margarine. Once the mixture is creamy, add flour mixture to oats, egg, grapefruit juice and walnuts. Mix well before pouring the mixture on a 9 x 5-inch lightly greased loaf pan.
- Place it into the oven to bake at 350 degrees F for an hour.
- Makes 1 loaf.
