INGREDIENTS
- 2/3 cup Ground rice or rice flour (available at specialty stores)
- 2 T Ground almonds
- 1/4 cup Sugar
- 1 Egg white, lightly beaten
- 2 tbsp Clear honey
- 3 Drops almond extract
- 12 Split blanched almonds

DIRECTIONS
- Set the oven to 325 degrees F
- Combine the ground almonds, rice and sugar, mix well and then whisk in the egg whites, almond and honey. Drop a tsp of batter into a baking sheet lined with waxed paper and then put a piece of almond at the center of each cookie.
- Place the sheet inside the oven and let them cook for fifteen to twenty minutes. Once they are ready, wait until the cookies cool down before taking them off the pan. Store inside a sealed jar.
