    Holiday Fruit Bread

    I usually prepare this during Christmas and have them wrapped in attractive wrappers.

    INGREDIENTS

    3 eggs
    1 cup white sugar
    1/2 cup vegetable oil
    1/2 cup milk
    1 teaspoon vanilla extract
    1 cup grated carrots
    2 1/2 cups all-purpose flour
    1 teaspoon baking powder
    1 teaspoon baking soda
    1/2 teaspoon ground cinnamon
    1/2 teaspoon salt
    1 cup flaked coconut
    1/2 cup candied cherries, chopped
    1/2 cup raisins
    1/2 cup chopped walnuts

    DIRECTIONS

    • Prepare the oven to 350 degrees F settings. Have a 9 x 5 x 3-inch greased loaf pan ready.
    • Whisk eggs in a large bowl until frothy. Add sugar and oil, beating until combined. Mix in milk, vanilla and carrot.
    • Use a separate bowl to mix flour, baking powder, soda, cinnamon, salt, coconut, cherries, raisins and walnuts. Stir thoroughly and pour over batter in one addition. Mix until moistened.
    • Pour dough into the prepared loaf pan and bake for an hour. Cool for about 10 minutes before removing bread from pan. Cool and wrap.
