INGREDIENTS

• 9 tbsp.  butter or lard, softened
• 1 1/2 cups sugar
• 2eggs, lightly beaten     
• 2 1/2 tbsp fresh lemon juice     
• 2 tsp grated lemon peel               
• 1 cup cottage cheese                    
• 2 cups flour                                      
• 1 tsp baking powder
• 1 tsp salt       

• Soften the butter and then sugar together until the consistency becomes frothy and then add in the eggs one at a time, lemon extract and peel. Grate the cheese and then pour it over the mixture while continuously beating.
• Mix the dry ingredients together and then mix them with the batter. Blend them well.
• Drop a spoonful of batter repeatedly on a lightly oiled baking sheet leaving a space in between each drop and then set the oven to 400 degrees F. Cook for fifteen minutes.
