    Banana Coconut Muffins Recipe

    INGREDIENTS

       *2 cups all-purpose flour
       *1/2 cup granulated sugar
       *1 tablespoon baking powder
       *1 teaspoon cinnamon
       *1/2 teaspoon salt
       *1 cup buttermilk
       *1 large egg, beaten
       *1/3 cup vegetable oil
       *1 cup mashed bananas
       *1 teaspoon vanilla extract
       *3/4 cup shredded coconut

    DIRECTIONS

    • Set the oven to preheat settings of 375 degrees F. Apply butter and flour over a 12-cup muffin tin or use paper liners to line them out.
    • In a moderate sized bowl, mix flour with sugar, baking powder, cinnamon and salt. Create a hole at the center of the mixture.
    • Use a smaller bowl to combine buttermilk, egg, vegetable oil, bananas, vanilla and coconut. Once properly blended, pour it over the hole and combine both mixtures well until moistened enough and avoid over mixing.  
    • Pour into the muffin tins by about ¾ full and place it into the oven to bake for about 20 minutes or just until done. Cool in pan set over a wire rack.
    • Makes 12 pieces of muffins.

    Banana Blueberry Muffins Recipe

    INGREDIENTS

       *1 1/2 cup all-purpose flour
       *1 teaspoon baking soda
       *1 teaspoon baking powder
       *1/2 teaspoon salt
       *3 large ripe bananas
       *3/4 cup granulated sugar
       *1 large egg, slightly beaten
       *1/3 cup melted butter
       *1 cup fresh or frozen blueberries
       *1 tablespoon all-purpose flour

    DIRECTIONS

    • Set the oven to preheat settings of 375 degrees F. Apply butter and flour over a 12-cup muffin tin or use paper liners instead. 
    • In a moderate-sized bowl, blend 1 ½ cups of flour with baking soda, baking powder and salt. Reserve a hole at the center of the mixture.
    • Use a separate bowl to mash the bananas. Add sugar, egg and melted butter. Blend well. Add the mixture onto the well and combine them both until it makes a moistened batter. Do not overmix.
    • Add blueberries and a tablespoon of flour. Carefully fold it into the batter.
    • Pour the batter into the muffin tins by about ¾ full. Place it into the oven to bake for about 20 minutes or until the muffins are done. Let it cool onto wire rack.
    • Makes 12 pieces of muffins.

    Apple Cinnamon Sweet Potato Muffins Recipe

    INGREDIENTS

       *3/4 cup oat bran
       *3/4 cup whole wheat flour
       *2/3 cup granulated sugar
       *1 1/2 teaspoons ground cinnamon
       *1 teaspoon baking powder
       *1 teaspoon baking soda
       *1/8 teaspoons salt
       *1/2 cup apples, skinless, finely chopped
       *1 cup fresh sweet potatoes (yams), cooked and mashed or 1 (15-ounce) can sweet potatoes, drained and mashed
       *1 large egg
       *2 large egg whites
       *3 tablespoons vegetable oil
       *2/3 cup plain yogurt

    DIRECTIONS

    • Set the oven to preheat settings of 350 degrees F.
    • Mix bran with flour, sugar, cinnamon, baking powder, baking soda, salt and apples in a bowl.
    • Use a separate bowl to blend the sweet potatoes with egg, egg whites, oil and yogurt. Combine the sweet potato mixture to the flour mixture. Blend all the ingredients well.  
    • Coat the muffin tins with vegetable cooking spray and ladle about ¼ cup of the batter for each muffin.
    • Place it into the oven and bake for 25 minutes or just until done. If preferred, add a cup of raisins.
    • Makes about 20 muffins.

    Apple Cinnamon Crunch Muffins Recipe

    INGREDIENTS

       Streusel Topping:
       *1/3 cup granulated sugar
       *2 tablespoons all-purpose flour
       *1 teaspoon ground cinnamon
       *1 tablespoon butter
     
       Muffins:
       *2 1/2 cups all-purpose flour
       *1 cup granulated sugar
       *1 tablespoon baking powder
       *1 teaspoon baking soda
       *1/2 teaspoon salt
       *1/2 teaspoon ground allspice
       *1/2 cup buttermilk
       *1/2 cup milk
       *1/3 cup ricotta cheese
       *2 tablespoons vegetable oil
       *2 tablespoons light corn syrup
       *1 large egg
       *2 egg whites
       *1 tablespoon vanilla extract
       *1 apple, cored, peeled and finely chopped

    DIRECTIONS

    • Set the oven to 375 degrees F preheat settings.
    • Use paper muffin cups to line the muffin pan. Coat them lightly with vegetable or canola oil spray.
    • For the Streusel Topping, mix 1/3 cup sugar, 2 tablespoons flour, cinnamon and butter. Using your fingers, rub the mixture well to make a coarse crumbs and reserve.
    • For the muffins, combine 2 1/2 cups flour, 1 cup sugar, baking powder, baking soda, salt and allspice in a large bowl.
    • Use another bowl to mix buttermilk together with milk, ricotta, canola oil, corn syrup, egg, egg whites and vanilla. Beat well until smooth. Mix in the apples and pour the mixture with the dry ingredients. Blend well until the ingredients have been moistened.
    • Ladle the batter onto the prepared muffin cups and fill it with batter by ¾ full. Sprinkle each top with some streusel mixture.
    • Place it into the oven and bake for about 20 minutes or until the muffins turn out light golden brown in color.
    • Take it off the oven and let it cool in the pan for about 10 minutes. Store in an airtight container after thorough cooling.
    • Makes 12 pieces of muffins.

    Apple-Cheddar Recipe

    INGREDIENTS

       *1/2 cup vegetable shortening
       *3/4 cup sugar – divided use
       *2 large eggs
       *1 1/2 cups all-purpose flour
       *1 teaspoon baking powder
       *1 teaspoon baking soda
       *1/2 teaspoon salt
       *3/4 cup quick cooking oats
       *2/3 cup shredded cheddar cheese
       *1/2 cup chopped pecans
       *3 apples, 1 diced, 2 thinly sliced
       *3/4 cup milk
       *1/4 teaspoon ground cinnamon
       *1/4 cup butter, melted

    DIRECTIONS

    • Soften shortening in a large bowl along with half cup of sugar. Add the eggs, one at a time and beat well after every addition. Reserve.
    • Blend flour with baking powder, baking soda and salt. Slightly mix and pour gradually into the shortening batter. Mix well until properly blended. Mix in the oats, cheese, pecans and the diced apple. Blend well after each addition. Add in the milk and stir all the ingredients together until properly moistened.
    • Set the oven to preheat settings of 375 degrees F. Apply butter over the 12 muffin tins and fill it with batter by about 2/3 full.
    • Blend ¼ of the sugar with cinnamon in a shallow bowl. In a small saucepan, melt butter over low heat. Take it off the stove top.
    • Dip the apple slices into butter and then into the cinnamon-sugar mixture. Press one slice of apple per muffin tin top. Add sprinkles of the cinnamon-sugar mixture leftover. Place it into the oven to bake for 25 minutes or until golden brown.
    • Makes 12 pieces of muffins.

    Apple Bran Muffins Recipe

    A healthy and delicious snack. These muffins make a great everyday breakfast or lunchbox treat.

    INGREDIENTS

       *1 cup all-purpose flour
       *1/3 cup packed brown sugar
       *2 teaspoons baking powder
       *1/2 teaspoon salt
       *1/2 teaspoon ground cinnamon
       *1/4 teaspoon ground nutmeg
       *1 cup (1 medium) peeled, finely chopped tart apple
       *3/4 cup water
       *1/2 cup NESTLÉ® CARNATION® Nonfat Dry Milk
       *1/4 cup vegetable oil
       *1 large egg
       *2 cups bran flake cereal

    DIRECTIONS

    • Set the oven to preheat settings of 400 degrees F. Apply butter onto 12-muffin cups or line it with parchment paper.
    • In a moderate sized bowl, mix flour with sugar, baking powder, salt, cinnamon and nutmeg.
    • In a small bowl, blend apple with water, dry milk, vegetable oil and egg. Add this into the flour mixture and blend well until moistened. Mix in the cereal and ladle the batter into the prepared muffin cups, filling it by 2/3 full.
    • Place it into the oven to bake for about 15 minutes or until a cake test has been done. Transfer onto wire rack and leave it to cool a bit. Serve.
    • Makes 12 muffins.

    Apple Bran Cheddar Muffins Recipe

    INGREDIENTS

       *1 cup whole bran cereal
       *1/4 cup milk
       *1 cup peeled, cored, and sliced apple (any variety)
       *1/3 cup canola oil
       *1 large egg
       *1 1/2 cups all-purpose flour
       *3 1/2 teaspoons baking powder
       *1/2 teaspoon salt
       *1 teaspoon ground cinnamon
       *1/3 cup packed brown sugar
       *1/4 cup shredded, low-fat cheddar cheese

    DIRECTIONS

    • Set the oven to preheat settings of 375 degrees F. Apply butter over the 12-cup muffin tin or line it with paper liners.
    • Blend the bran cereal, milk and apples. Combine thoroughly. Whisk the canola oil and egg. Use a separate bowl to blend the flour together with baking powder, salt, cinnamon and brown sugar. Leave out a well at the center of the mixture and add in the wet mixture. Blend well. Add the shredded cheese and blend well until moistened.
    • In the prepared pan, pour the batter and place it into the oven then bake for about 20 minutes. Set aside to cool for a few minutes and serve.
    • Makes 12 servings.

    INGREDIENTS

    • 2 Cups Flour
    • 2 tsp. Baking powder
    • 1/2 tsp. Baking soda
    • 1/2 tsp. Salt
    • 2/3 Cup brown Sugar
    • 2 lg Eggs
    • 1 cup milk
    • 1/2 Cup vegetable oil
    • 1 tsp. Vanilla extract
    • 1/2 Cup Mini-chocolate chips
    DIRECTIONS

    • Set the oven to 425 degrees F. lightly oil a dozen of muffin tins.
    • Mix all the dry ingredients together in a bowl while in a separate mixing container mix together the sugar, oil, vanilla and milk together and then pour them over the dry mixture, add in the chocolate chips and then pour them over the tins and then place them inside the oven and then bake for eighteen to twenty minutes.
