Weekend with family is more enjoyable when served with this delicious muffin recipes.

INGREDIENTS
1 medium egg
1 ½ cups of flour
¾ cup of milk
¾ cup of chocolate chips
½ cup of brown sugar
½ cup of puréed banana
¼ cup of vegetable oil
3 teaspoons of baking powder
½ teaspoon of salt
½ teaspoon of cinnamon
¼ teaspoon of nutmeg

DIRECTIONS
- Set oven to 375 degrees F preheat settings.
- Soften butter and sugar together. Add eggs one at a time. Stir in applesauce, cinnamon, allspice and cloves.
- Sift salt together with baking soda and flour. Add to applesauce mixture, stirring well to combine. Mix in the chopped nuts.
- Pour batter into greased muffin tins. Place it into the preheated oven to bake for 15 minutes.
- Sprinkle muffin tops with powdered sugar when warm.

3 teaspoons of ground cinnamon

2 teaspoons of baking soda
1 teaspoon of ground cloves
1 teaspoon of salt
Powdered sugar

DIRECTIONS

INGREDIENTS
1 medium apple, cored and grated
2 egg whites
1 cup of buttermilk
1 cup of rolled oats
1 cup of wholewheat flour
½ cup of raisins
¼ cup of honey
1 ½ teaspoons of baking powder
1 ½ teaspoons of cinnamon
½ teaspoon of salt

DIRECTIONS
- Coat muffin pan using non-stick cooking spray.
- Combine buttermilk, oats and raisins in a large mixing bowl. Add egg whites and honey, mixing well.
- Use another bowl to combine whole wheat flour, baking powder, cinnamon and salt. Mix this with the other mixture and fold in the grated apple.
- Pour batter into muffin cups to 3/4 full. Place it into the oven and bake at 350 degrees F for about 25 minutes. Allow muffins to cool in pan for 10 minutes and remove from cups. Serve.

* 1 3/4 cups Whole Wheat Flour
* 3/4 cup Cocoa Powder, unsweetened
* 1 1/2 tsp. Baking Soda
* 2 large Eggs
* 1/2 cup Canola Oil
* 2 cups Granulated Sugar
* 1 1/2 tsp. Baking Powder
* 1 tsp. Salt
* 1 cup Milk, 1%
* 1 tbsp. Vanilla Extract

DIRECTIONS
- In a large mixing bowl, combine all the ingredients together. Stir continuously for 2 minutes. Add a cup of boiling water.
- Pour batter into 12-jumbo muffin cups coated with non-stick spray.
- Place it into the oven to bake at 350 degrees F for about 20 minutes.
- Invert muffins over wire rack to cool. To store, place the muffins in an air-tight container after thoroughly cool.
- Top with milk or ice cream and serve.
- Makes 12 servings.

* 1 c. nonfat milk
* 1 large egg
* .25 c. margarine
* 2.5 c. flour
* 2 tsp. baking powder
* 2 c. blueberries

DIRECTIONS
- Combine sugar, milk, egg and margarine. Mix in flour and baking powder. Fold in the blueberries, stirring with a spoon.
- Place it into the oven to bake at 400 degrees F for about 20 minutes.
- Makes 2 dozen muffins.

INGREDIENTS
* 7 large eggs
* 1/4 cup milk
* 3/4 cup shredded 2% cheddar cheese
* 1 cup diced red onion
* 12 slices shaved brown sugar ham lunchmeat
* 1 TBSP Olive Oil
* 1/8 tsp Garlic powder
* 1/2 tsp Tabasco
* 1 tsp salt
* 1/2 tsp pepper
* 1 tsp dried parsley

DIRECTIONS
- Heat olive oil in pan and saute the onions until clear. Add ham and cook to a light brown finish. Set aside to cool.
- Preheat oven to 350 degrees F.
- In a bowl, combine eggs, milk, Tabasco, garlic, salt and pepper. Stir in cheese and continue blending. Add the cooled ham slowly into the mixture.
- Ladle the batter into 12-cup muffin tin and set on the center rack of the oven. Cook for about 15 minutes and make sure not to overcook.

- Use a larger bowl to mix egg, applesauce, mashed banana, vanilla and brown sugar. Mix thoroughly.
- Combine both mixtures together just enough to moisten. Mix in oats and raisins.
- Pour batter into the muffin tin and set it in the oven for 25 minutes of baking.
- Makes a dozen serving.
