This makes an excellent bread recipe for special occasions but simple enough to make and serve for daily meals.

INGREDIENTS
3/4 cup dried figs
3/4 cup raisins
3/4 cup dried apricots
3 tablespoons chopped crystallized ginger
2/3 cup dry sherry
1 teaspoon orange zest
1 cup chopped walnuts
2 tablespoons unsalted butter, softened
3/4 cup white sugar
1 egg, beaten
1 cup milk
2 1/4 cups unbleached flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground allspice
1 teaspoon salt

DIRECTIONS
- In a small saucepan, combine the dried fruit with the crystallized ginger, sherry and orange rind. Cook until boiling and remove from heat. Cover and cool for half hour.
- Toast the walnuts on a baking sheet for about 10 minutes. Cool.
- Prepare the oven to 350 degrees F settings. Have a 9×5 inch slightly greased and floured loaf pan ready.
- Soften butter and sugar in a large bowl. Whisk in the egg and milk. In a separate bowl, combine flour, baking powder, allspice and salt. Add this to the egg mixture slowly but do not over mix. Fold in the walnuts and fruit mixture.
- Transfer batter into the reserved loaf pan. Bake for about 70 minutes. Cool bread for 15 minutes before removing from pan. Cool over wire rack and wrap.

INGREDIENTS
3 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
1/2 cup vegetable oil
2 eggs
1 cup shredded apple
3/4 cup chopped walnuts
1/2 teaspoon vanilla extract

DIRECTIONS
- Prepare the oven to 350 degrees F settings. Have a 4-1/2 x 8-1/2 inch greased loaf pan ready.
- In a large bowl, combine flour, baking powder, soda, salt, sugar, oil, eggs, apple, walnuts and vanilla until the dry ingredients are moistened. Transfer into the prepared pan and bake for about 40 minutes.

1/4 cup candied pineapple, diced
1/2 cup currants
1/2 cup chopped candied cherries
2 eggs
1 cup milk
1/4 cup vegetable oil

DIRECTIONS
- Prepare the oven to 350 degrees F settings. Have a 9 x 5 x 3-inch greased loaf pan ready.
- Prepare dough combining flour, sugar, baking powder, salt, candied pineapple, raisins or currants, and cherries in a large bowl. Combine well and form a well at the center.
- Whisk eggs until frothy in a small bowl. Stir in milk and oil. Add this into the well and mix until moistened. Transfer into the prepared pan and bake for an hour. Allow bread to cool for 10 minutes before removing from pan.

INGREDIENTS
1 cup water
1 egg, beaten
2 tablespoons dry milk powder
2 tablespoons honey
2 tablespoons margarine
1 1/2 teaspoons salt
1 cup bread flour
2 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon ground ginger
1/2 teaspoon ground allspice
1/2 teaspoon ground mace
1/2 teaspoon ground cardamom
1 1/4 teaspoons active dry yeast
1/2 cup raisins
1/2 cup candied mixed fruit peel

DIRECTIONS
- Put all ingredients into a bread machine pan (except raisins and fruit peel) in order recommended by the manufacturer. Choose the Sweet Bread setting.
- Once the machine beeps, add raisins and mixed fruit peel. Complete the cycle.

INGREDIENTS
1/4 cup water
1/3 cup milk
6 tablespoons margarine
2 eggs
1/3 cup white sugar
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
4 cups bread flour
2 1/2 teaspoons active dry yeast
1 tablespoon lemon zest
1 tablespoon orange zest
1/3 cup raisins
1/3 cup sliced almonds

DIRECTIONS
- Add water, milk, butter or margarine, eggs, white sugar, salt, cinnamon, nutmeg, flour and yeast into the bread machine pan. Set to Sweet Bread setting and press Start.
- Once the machine has finished the first cycle, add the lemon and orange zest, raisins and almonds. Continue mixing until done.

2 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup flaked coconut
1/2 cup candied cherries, chopped
1/2 cup raisins
1/2 cup chopped walnuts

DIRECTIONS
- Prepare the oven to 350 degrees F settings. Have a 9 x 5 x 3-inch greased loaf pan ready.
- Whisk eggs in a large bowl until frothy. Add sugar and oil, beating until combined. Mix in milk, vanilla and carrot.
- Use a separate bowl to mix flour, baking powder, soda, cinnamon, salt, coconut, cherries, raisins and walnuts. Stir thoroughly and pour over batter in one addition. Mix until moistened.
- Pour dough into the prepared loaf pan and bake for an hour. Cool for about 10 minutes before removing bread from pan. Cool and wrap.

1 (16 oz.) can solid pack pumpkin
3/4 c. chopped pecans
2/3 c. vegetable oil
4 eggs (2 eggs and 2 egg beaters work also)
Glaze:
1 c. powdered sugar
1/4 c. undiluted orange juice concentrate
1/8 tsp. ground allspice

INGREDIENTS
2 c. sugar
1 c. cooking oil
3 c. flour (all purpose)
2 eggs
2 c. pulp (one of three: applesauce, pumpkin, persimmon)
1 c. raisins
2 c. chopped nuts
2 tsp. soda
1 1/2 tsp. pumpkin pie spice

DIRECTIONS
- Soften oil, sugar and eggs together.
- Add soda in pulp until dissolved. Add this into the prior mixture and combine with the dry ingredients.
- Pour batter in a well-greased loaf pan and set for a 325 degrees F baking until done.

Baking bread and adding tropical fruits into the mixture makes a great variety for your usual bread recipes.

INGREDIENTS
2 lg. ripe bananas (about a c. mashed)
1 (8 oz.) can pineapple chunks
1 1/2 c. flour
3/4 c. sugar
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1/4 lb. butter at room temperature
1/4 c. + 1 tbsp. flaked coconut

DIRECTIONS
- Preheat oven to 350 degrees F. Grease an 8 1/2 x 4 1/2 inch loaf pan with butter.
- Mash bananas and drain the pineapples. Chop the latter and pat dry.
- Combine flour, sugar, eggs, bananas and butter using an electric mixer at low speed. Once properly combined, increase settings to medium and beat for 2 more minutes.
- Mix in pineapple and 1/4 cup of coconut into the mixture. Pour the batter into the greased loaf pan and drizzle it with the remaining coconut.
- Bake for an hour and then cool for 10 minutes over wire rack. Remove from pan and cool thoroughly.
