    Ginger Shortbread Wedges

    "Holiday food preparations can be time-consuming. Good thing there are recipes as easy as this one which makes a great idea for gifts as well."

    INGREDIENTS

    1/2 cup butter (no substitutes), softened
    1/3 cup sugar
    1 teaspoon ground ginger
    1 cup all-purpose flour

    DIRECTIONS

    • Soften butter with sugar and ginger. Mix in flour well into dough and press mixture into a non-greased 8-inch round baking pan.
    • Score dough using the tines of a fork, making 8 wedges. Place it into the oven to bake for about 35 minutes at 325 degrees F. Cut along the marked lines and cool onto a wire rack prior to serving.
    • Makes 8 servings

    Maple Pecan Shortbread Squares

    "This will surely stick with you for a long time. It’s delicious and we simply can’t get enough of it."

    INGREDIENTS

    1 cup all-purpose flour
    1/3 cup packed brown sugar
    1/2 cup softened butter

    1 egg
    1/3 cup packed brown sugar
    3 tablespoons pure maple syrup
    1/2 cup chopped pecans

    DIRECTIONS

    • Place flour and 1/3 cup brown sugar into a mixer. Add and blend in softened butter until dough has formed. Transfer dough into a non-greased 8×8-inch baking dish. Pierce small holes into the dish using the tines of a fork.
    • Turn the oven on to 350 degrees F (175 degrees C). Bake the shortbread for 20 minutes.
    • Meanwhile, whisk egg into a mixing bowl. Add 1/3 cup brown sugar, maple syrup and pecans, combining well.
    • Transfer the pecan mixture onto the hot crust. Put it back into the oven and bake for another 15 minutes. Remove crust from the oven and run a knife around the edges. Let it cool well before cutting them into inch-sized sqaures. Serve.

    Kay’s Shortbread

    "I love preparing this during the holidays or when the family comes in for a visit. It’s always impressive as ever."

    INGREDIENTS

    2 cups all-purpose flour
    1/4 teaspoon baking powder
    1/4 teaspoon salt
    1/2 cup confectioners’ sugar
    1 cup butter, softened
    1 teaspoon vanilla extract
    2 tablespoons white sugar

    DIRECTIONS

    • Combine flour, baking powder, salt and confectioners’ sugar. Blend in the butter and vanilla, combining well until a stiff dough is formed.
    • Press dough into a 9-inch round cake pan. Prick it using the tines of a fork. Sprinkle dough with the excess sugar.
    • Bake this into a 350 degrees F (175 degrees C) preheated oven for about 35 minutes. Cut into wedges and transfer onto wire racks to cool.
    • Serve cookies after separating them.
    • Makes 14 cookies

    Raspberry and Almond Shortbread Thumbprints

    "This cookie recipe makes raspberry jam truly addicting."

    INGREDIENTS

    1 cup butter, softened
    2/3 cup white sugar
    1/2 teaspoon almond extract
    2 cups all-purpose flour
    1/2 cup seedless raspberry jam

    1/2 cup confectioners’ sugar
    3/4 teaspoon almond extract
    1 teaspoon milk

    DIRECTIONS

    • Soften butter with white sugar. Once smooth, stir in 1/2 teaspoon almond extract. Blend in flour until dough is formed.
    • Roll dough to 1-1/2 inch sized balls and line them up on non-greased cookie sheets. Make indentations at the center of the balls using your thumb. Fill the space with preserves.
    • Place this into a 350 degrees F (175 degrees C) preheated oven to bake for about 18 minutes. Cool for a minute before removing them from the cookie sheet.
    • Meanwhile, combine confectioners’ sugar with 3/4 teaspoon almond extract and milk. Once mixture is smooth, drizzle over the warm cookies and serve.

    Irish Soda Bread Cookies II

    "This is an easy recipe. Surprisingly too easy for a delicious-tasting delight."

    INGREDIENTS

    2 cups all-purpose flour
    3/4 cup white sugar
    1/2 teaspoon baking soda
    1/2 cup butter
    1/2 cup dried currants
    1/4 cup buttermilk
    1 egg
    1/4 teaspoon salt
    1 teaspoon caraway seed

    DIRECTIONS

    • Turn the oven on to 350 degrees F (175 degrees C).
    • In a mixing bowl, blend the dry ingredients together. Cut in butter using a pastry blender until mixture resembles coarse meal. mix in the currants, followed by the beaten egg.
    • Add milk and stir using a fork until it makes a soft dough. Add more milk as needed.
    • Transfer the dough into a floured surface and shape into a ball. Knead for about 6 times and roll it out to 1/4-inch thick. Slice it into squares and wedges using a knife.
    • Bake for about 14 minutes.
    • Makes 3 dozen (approx.)

    Berry Shortbread Dreams

    • Create an indentation at the center using the end of the wooden spoon handle. Spoon in the jam at the center.
    • Place the baking sheets into the oven and bake for about 18 minutes at 350 degrees F. Transfer into wire racks to cool and ladle more jam as needed onto the cookies.
    • Mix the glaze ingredients together and drizzle over the cookies.

    This is a product of fusion baking, using up most leftover ingredients in the refrigerator.

    INGREDIENTS

    1 cup butter
    1/2 cup maple syrup
    2 cups flour
    1/4 teaspoon salt

    DIRECTIONS

    • Soften butter and maple syrup using an electric mixer into a large bowl.

    2 cups butter, softened
    1 3/4 cups white sugar
    6 eggs
    1 tablespoon caraway seed
    8 cups all-purpose flour

    • Soften butter and sugar into a large bowl. Combine well.

    INGREDIENTS

    1 cup butter flavored shortening
    1 cup white sugar
    2 eggs
    1 teaspoon vanilla extract
    1 banana, peeled and mashed
    2 cups all-purpose flour
    1 teaspoon baking soda
    1/2 teaspoon salt

    3 tablespoons butter
    1/3 cup confectioners’ sugar
    1 tablespoon milk
    1 teaspoon vanilla extract

    DIRECTIONS

    • Soften shortening and white sugar into a medium bowl. Once mixture is smooth, whisk in eggs, vanilla extract and banana.
    • Mix flour, baking soda and salt into a separate bowl. Combine well with the shortening mixture until batter is sticky. Drop dollops of batter onto lightly greased baking sheets.
    • Bake in a 350 degrees F (175 degrees C) preheated oven for about 15 minutes.
    • Mix butter, confectioners’ sugar, milk and vanilla extract into a medium bowl. Add enough milk to make a pourable consistency. Moisten cookies with this warm mixture and serve.
