INGREDIENTS
1/2 cup butter (no substitutes), softened
1/3 cup sugar
1 teaspoon ground ginger
1 cup all-purpose flour

DIRECTIONS
- Soften butter with sugar and ginger. Mix in flour well into dough and press mixture into a non-greased 8-inch round baking pan.
- Score dough using the tines of a fork, making 8 wedges. Place it into the oven to bake for about 35 minutes at 325 degrees F. Cut along the marked lines and cool onto a wire rack prior to serving.
- Makes 8 servings

INGREDIENTS
1 cup all-purpose flour
1/3 cup packed brown sugar
1/2 cup softened butter
1 egg
1/3 cup packed brown sugar
3 tablespoons pure maple syrup
1/2 cup chopped pecans

DIRECTIONS
- Place flour and 1/3 cup brown sugar into a mixer. Add and blend in softened butter until dough has formed. Transfer dough into a non-greased 8×8-inch baking dish. Pierce small holes into the dish using the tines of a fork.
- Turn the oven on to 350 degrees F (175 degrees C). Bake the shortbread for 20 minutes.
- Meanwhile, whisk egg into a mixing bowl. Add 1/3 cup brown sugar, maple syrup and pecans, combining well.
- Transfer the pecan mixture onto the hot crust. Put it back into the oven and bake for another 15 minutes. Remove crust from the oven and run a knife around the edges. Let it cool well before cutting them into inch-sized sqaures. Serve.

INGREDIENTS
2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup confectioners’ sugar
1 cup butter, softened
1 teaspoon vanilla extract
2 tablespoons white sugar

- Combine flour, baking powder, salt and confectioners’ sugar. Blend in the butter and vanilla, combining well until a stiff dough is formed.
- Press dough into a 9-inch round cake pan. Prick it using the tines of a fork. Sprinkle dough with the excess sugar.
- Bake this into a 350 degrees F (175 degrees C) preheated oven for about 35 minutes. Cut into wedges and transfer onto wire racks to cool.
- Serve cookies after separating them.

1 banana, peeled and mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
3 tablespoons butter
1/3 cup confectioners’ sugar
1 tablespoon milk
1 teaspoon vanilla extract

DIRECTIONS
- Soften shortening and white sugar into a medium bowl. Once mixture is smooth, whisk in eggs, vanilla extract and banana.
- Mix flour, baking soda and salt into a separate bowl. Combine well with the shortening mixture until batter is sticky. Drop dollops of batter onto lightly greased baking sheets.
- Bake in a 350 degrees F (175 degrees C) preheated oven for about 15 minutes.
- Mix butter, confectioners’ sugar, milk and vanilla extract into a medium bowl. Add enough milk to make a pourable consistency. Moisten cookies with this warm mixture and serve.
