"Breakfast or snacks, this banana bread recipe will surely be a rewarding meal."

INGREDIENTS
1/2 cup margarine, softened
1 (8 ounce) package cream cheese, softened
1 1/4 cups white sugar
2 eggs
1 cup mashed bananas
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup chopped pecans
2 tablespoons brown sugar
2 teaspoons ground cinnamon

DIRECTIONS
- Soften butter/margarine with cream cheese. Add white sugar and beat continuously until light and fluffy. Add the eggs one at a time and beat well after every addition.
- Mix in the mashed bananas and vanilla. Add flour, baking powder and soda. Stir well until batter becomes moist.
- Stir the chopped pecans with 2 tablespoons brown sugar and cinnamon.
- Pour batter evenly among two 8 x 4-inch greased and floured loaf pans. Top with sprinkles of pecan mixture and add the rest of the batter on top.
- Bake for about 45 minutes and cool well before serving.
- Makes two 8 x 4-inch loaves

INGREDIENTS
1/2 cup butter, melted
1 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour

1/2 cup chopped walnuts
2 medium bananas, sliced

DIRECTIONS
- Turn the oven on to 350 degrees F (175 degrees C).
- Combine melted butter and sugar into a large bowl. Add eggs and vanilla, stirring until properly combined.
- Mix flour, baking soda and salt. Add this into the butter mixture and stir until smooth. Fold in the sour cream, walnuts and bananas. Transfer mixture into a 9 x 5-inch greased loaf pan.
- Bake for about an hour and cool well prior to serving.
- Makes one 9×5-inch loaf

INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
3/4 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/3 cup packed brown sugar
2 tablespoons all-purpose flour
1/8 teaspoon ground cinnamon
1 tablespoon butter

DIRECTIONS
- Turn the oven on to 375 degrees F (190 degrees C). Grease 10 muffin cups lightly.
- Combine 1-1/2 cups flour, baking soda, baking powder and salt then seperately combine the bananas, sugar, egg and melted butter.
- Mix both mixtures together until batter is moistened. Ladle the mixture into the prepared muffin cups.
- Combine brown sugar, 2 tablespoons flour and cinnamon into a small bowl. Use a pastry cutter to add a tablespoon of butter into the mixture
- Cut in 1 tablespoon butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
- Bake for about 20 minutes and cool prior to serving.
- Makes 10 muffins

INGREDIENTS
2 cups flour

1 teaspoon baking soda
4 very ripe bananas
2 eggs
1 cup sugar
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon nutmeg
1/4 teaspoon ground cloves
1/2 cup melted butter
1 teaspoon vanilla extract

DIRECTIONS
- Turn the oven on to 350 degrees F (175 degrees C). Prepare two 8 x 3-inch greased and floured loaf pans.
- In a large bowl, stir flour, baking powder and baking soda.
- In a separate bowl, mash the bananas well and combine it with eggs, sugar, cinnamon, salt, nutmeg and cloves. Blend in the melted butter and vanilla extract. Fold in the flour mixture, stirring until a smooth batter is formed. Transfer into the prepared pans and bake for about 45 minutes.
- Allow loaves to cool in pan for 10 minutes after baking. Remove and cool well onto wire rack.
- Makes 2 – 8×4 inch loaf pans

1 cup shortening
2 cups white sugar
6 very ripe bananas, mashed
4 eggs
2 1/4 cups all-purpose flour
1 teaspoon salt
2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon ground cloves
1 teaspoon freshly grated nutmeg
1 cup chopped walnuts

DIRECTIONS
- Turn the oven on to 350 degrees F (175 degrees C). Coat two 9 x 5-inch loaf pans with non-stick cooking spray.
- Soften shortening and sugar until light. Whisk in the eggs one at a time.
- In a large bowl, sift flour together with salt, baking soda, cinnamon, cloves and nutmeg. Add mixture to the prepared shortening mix and combine well.
- Mash the bananas well and blend it into the batter. Mix in the walnuts and transfer the batter into the prepared pans.
- Bake for about 60 to 75 minutes at 350 degrees F (175 degrees C). Check every 15 minutes to prevent over baking.
- Makes 2 large loafs

2 cups all-purpose flour
3 tablespoons buttermilk powder
1 tablespoon baking powder
1 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon baking soda
1/2 cup butter, softened
2 tablespoons vegetable oil
1 cup light brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 1/2 cups mashed ripe bananas
1/3 cup milk
1/2 cup chopped walnuts
1 cup chocolate chips

DIRECTIONS
- Prepare a 12-cup greased and floured or paper-lined muffin tin.
- In a medium bowl, mix flour, buttermilk powder, baking powder, salt, cinnamon, nutmeg and baking soda. Form a well at the center.
- Use another bowl to blend together creamed butter, oil and sugars. Add eggs and beat thoroughly. Stir in the bananas and milk. Transfer this mixture into the well made at the center of the dry ingredients. Combine until moistened and do not over mix. Add the walnuts and chocolate chips, folding it gently into the batter.
- Pour the batter into the prepared muffin tins, filling each by about 2/3-full.
- Place it into a 350 degrees F preheated oven and bake for about 20 minutes or until done. Place over wire rack to cool.
- Makes 1 dozen muffins.

INGREDIENTS
Topping:
1/2 cup quick or old fashioned oats
1/4 cup brown sugar, firmly packed
3 tablespoons chopped nuts
2 tablespoons whole-wheat flour or all-purpose flour
2 1/2 teaspoons vegetable oil
1 teaspoon vanilla extract
Muffins:
1 cup milk
1/2 cup quick or old fashioned oats
1/4 cup vegetable oil
2 large eggs
1 (14-ounce) package banana nut quick bread and muffin mix
1/2 cup chopped dates

DIRECTIONS
- Prepare 18 medium bottom-greased or paper baking cups-lined muffin cups
- Mix the topping ingredients together, combining well.
- For the muffins, stir milk with oats in a large bowl. Leave it for 10 minutes. Whisk in oil and eggs, stirring until thoroughly combined. Add the banana quick bread mix and dates. Use hands for mixing but do not over mix.
- Fill the muffin cups with the batter by about 3/4-full. Sprinkle each with the prepared topping mixture.
- Bake in a 400 degrees F preheated oven for about 20 minutes. Take the muffins into a wire rack to cool.
- Makes 18 muffins.

1 cup mashed bananas
1 teaspoon vanilla extract

Streusel Topping:
1/3 cup granulated sugar
1/4 cup all-purpose flour
1/4 teaspoon ground cinnamon
3 tablespoons cold butter

DIRECTIONS
- Prepare a 12-cup greased and floured or paper-lined muffin tin.
- In a medium bowl, mix flour, sugar, baking powder, cinnamon and salt. Form a well at the center.
- Use a separate bowl to combine the milk, egg, vegetable oil, bananas, vanilla and nuts. Transfer this into the reserved well. Combine well until moistened but do not over mix.
- For the Streusel Topping, mix sugar, flour and cinnamon in a small bowl before cutting in the butter until crumbly.
- Fill the muffin tins by 3/4-full and sprinkle with the prepared toppings.
- Bake in a 400 degrees F preheated oven for about 18 minutes. Let it cool over wire rack.
- Makes 1 dozen muffins.

- Sift flour along with baking powder and salt.
- In a large mixing bowl, blend sugar with shortening, stirring until light and fluffy. Add eggs one at a time, beating well into the mixture before adding the next one. Mix in the mashed bananas.
- Put the dry ingredients into the egg mixture. Stir well until moistened. Blend in the chopped buts before pouring batter into the prepared muffin tins. Fill each cup by 2/3-full.
- Bake at a 350 degrees F preheated oven for about 20 minutes. Remove from oven and cool over wire rack.
- Makes 1 dozen muffins.
