    Banana Walnut Chocolate Chip Muffins

    Banana, walnuts and chocolate chips – a great combination in one bite!

    INGREDIENTS

    2 cups all-purpose flour
    3 tablespoons buttermilk powder
    1 tablespoon baking powder
    1 teaspoon salt
    1/2 teaspoon ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon baking soda

    1/2 cup butter, softened
    2 tablespoons vegetable oil
    1 cup light brown sugar, packed
    1/2 cup granulated sugar
    2 large eggs
    1 1/2 cups mashed ripe bananas
    1/3 cup milk
    1/2 cup chopped walnuts
    1 cup chocolate chips

    DIRECTIONS

    • Prepare a 12-cup greased and floured or paper-lined muffin tin.
    • In a medium bowl, mix flour, buttermilk powder, baking powder, salt, cinnamon, nutmeg and baking soda. Form a well at the center.
    • Use another bowl to blend together creamed butter, oil and sugars. Add eggs and beat thoroughly. Stir in the bananas and milk. Transfer this mixture into the well made at the center of the dry ingredients. Combine until moistened and do not over mix. Add the walnuts and chocolate chips, folding it gently into the batter.
    • Pour the batter into the prepared muffin tins, filling each by about 2/3-full.
    • Place it into a 350 degrees F preheated oven and bake for about 20 minutes or until done. Place over wire rack to cool.
    • Makes 1 dozen muffins.
