    Banana Oat-Nut Muffins

    Streusel-topped banana, nut and oatmeal made muffins.

    INGREDIENTS

    Topping:
    1/2 cup quick or old fashioned oats
    1/4 cup brown sugar, firmly packed
    3 tablespoons chopped nuts
    2 tablespoons whole-wheat flour or all-purpose flour
    2 1/2 teaspoons vegetable oil
    1 teaspoon vanilla extract

    Muffins:
    1 cup milk
    1/2 cup quick or old fashioned oats
    1/4 cup vegetable oil
    2 large eggs
    1 (14-ounce) package banana nut quick bread and muffin mix
    1/2 cup chopped dates

    DIRECTIONS

    • Prepare 18 medium bottom-greased or paper baking cups-lined muffin cups
    • Mix the topping ingredients together, combining well.
    • For the muffins, stir milk with oats in a large bowl. Leave it for 10 minutes. Whisk in oil and eggs, stirring until thoroughly combined. Add the banana quick bread mix and dates. Use hands for mixing but do not over mix.
    • Fill the muffin cups with the batter by about 3/4-full. Sprinkle each with the prepared topping mixture.
    • Bake in a 400 degrees F preheated oven for about 20 minutes. Take the muffins into a wire rack to cool.
    • Makes 18 muffins.
