    Banana Nut Streusel Muffins

    Banana muffins with an irresistible topping.

    INGREDIENTS

    2 cups all-purpose flour
    1/2 cup granulated sugar
    1 tablespoon baking powder
    1 teaspoon ground cinnamon
    1/2 teaspoon salt
    1 cup milk
    1 large egg, beaten
    1/3 cup vegetable oil
    1 cup mashed bananas
    1 teaspoon vanilla extract
    1/2 cup chopped nuts

    Streusel Topping:
    1/3 cup granulated sugar
    1/4 cup all-purpose flour
    1/4 teaspoon ground cinnamon
    3 tablespoons cold butter

    DIRECTIONS

    • Prepare a 12-cup greased and floured or paper-lined muffin tin.
    • In a medium bowl, mix flour, sugar, baking powder, cinnamon and salt. Form a well at the center.
    • Use a separate bowl to combine the milk, egg, vegetable oil, bananas, vanilla and nuts. Transfer this into the reserved well. Combine well until moistened but do not over mix.
    • For the Streusel Topping, mix sugar, flour and cinnamon in a small bowl before cutting in the butter until crumbly.
    • Fill the muffin tins by 3/4-full and sprinkle with the prepared toppings.
    • Bake in a 400 degrees F preheated oven for about 18 minutes. Let it cool over wire rack.
    • Makes 1 dozen muffins.
