    Banana Nut Muffins

    These are simply adorable muffins that you won’t be able to resist.

    INGREDIENTS

    2 cups all-purpose flour
    3 teaspoons baking powder
    1/2 teaspoon salt
    1 cup granulated sugar
    1/2 cup vegetable shortening
    2 large eggs
    1 1/3 cups mashed bananas (about 4 medium)
    1 cup chopped nuts

    DIRECTIONS

    • Grease a 12-muffin tin or line with paper bakin cup.
    • Sift flour along with baking powder and salt.
    • In a large mixing bowl, blend sugar with shortening, stirring until light and fluffy. Add eggs one at a time, beating well into the mixture before adding the next one. Mix in the mashed bananas.
    • Put the dry ingredients into the egg mixture. Stir well until moistened. Blend in the chopped buts before pouring batter into the prepared muffin tins. Fill each cup by 2/3-full.
    • Bake at a 350 degrees F preheated oven for about 20 minutes. Remove from oven and cool over wire rack.
    • Makes 1 dozen muffins.
