    Banana and Blueberry Nut Bread with Almond Hazelnut

    All the delicious bread flavors with nutty perfecion!

    INGREDIENTS

    4 medium very ripe bananas
    1 cup egg whites plus 1 egg
    1 cup (2 sticks) butter (unsalted), softened
    1 tbsp vanilla extract
    ¾ c. brown sugar
    4 c. all purpose flour
    ½ tsp. salt
    1 tsp. baking soda
    ¾ to 2 c. fresh blueberries (your choice)
    2 c. finally chopped almonds and hazelnuts
    2 tbsp. crunchy peanut butter
    3 tbsp. rum

    DIRECTIONS

    • Prepare the oven to 350 degrees F. Have two buttered and floured glass baking pans ready.
    • Soak blueberries in rum for half hour.
    • Mash 4 bananas in a mixing bowl. Add and stir in all the ingredients but not including 1 tablespoon of the butter, egg whites (all but 1 tablespoon), 1 egg, vanilla extract and brown sugar.
    • Use a large mixing bowl to combine flour, salt, 1½ cups chopped nuts and baking soda. Add the wet mixture and combine well. Add the blueberry rum and continue stirring until well blended.
    • Distribute batter evenly among the prepared baking pans.
    • For the toppings, combine the rest of the chopped nuts, a tablespoon of egg whites and a tablespoon of butter. Top over batter and bake for an hour or until done.
    • Remove from oven and cool for 20 minutes. Take the bread off the pans and cool thoroughly over wire racks. Slice after 3 hours.
    • Makes 2 loaves.
