    Apricot Pecan Tea Loaf Quick Bread Recipe II

    This would surely inspire you to make your own bread over purchasing in bread stores.

    INGREDIENTS

    * 1 cup dried apricots (diced)
    * 1/2 cup candied ginger (finely chopped)
    * 1 teaspoon lemon rind (grated)
    * 2 tablespoon fresh lemon juice
    * 1/3 cup butter
    * 2/3 cup brown sugar (packed)
    * 2 large eggs
    * 1 1/2 cup all purpose flour
    * 1/4 teaspoon salt
    * 1/2 cup milk
    * 1/3 cup pecans (chopped)

    DIRECTIONS

    • In a bowl, combine diced apricots, ginger, lemon rind and lemon juice.
    • Use another bowl to mix butter and sugar with an electric mixer. Once fluffy, add eggs one at a time.
    • Add flour alternately with baking powder and salt with milk. Add apricot mixture and fold.
    • Scrape mixture into a greased loaf pan and place it into a 350 degrees preheated oven to bake for an hour.
    • Cool loaf in pan for 10 minutes before removing it to move in a wire rack for thorough cooling.
    • Makes one loaf.
