    Apricot Almond Buns

    Enjoy a healthy snack with this delicious recipe. Yummy!

    INGREDIENTS

    1 cup all-purpose or bread flour
    1/2 cup packed brown sugar
    1/2 teaspoon salt
    2 (1/4-ounce) packages active dry yeast or 5 teaspoons
    1/2 cup milk
    1/2 cup water
    3 tablespoons butter or margarine
    2 large eggs
    3 3/4 cups all-purpose or bread flour
    3 tablespoons butter or margarine, melted
    1/2 cup packed brown sugar
    1 cup dried apricot, chopped
    1/2 cup slivered almonds

    DIRECTIONS

    • Combine 1 cup flour, 1/2 cup brown sugar, salt and yeast in a large bowl.
    • Set a small saucepan over low heat and combine milk, water and 3 tablespoons butter. Cook until lukewarm and pour into dry ingredients. Mix using an electric mixer set at medium speed for 2 minutes.
    • Set mixer to high speed and whisk in the eggs along with a cup of flour. Mix for 2 minutes. Blend in 2-3/4 cups of flour until soft dough is formed. Knead for about 10 minutes.
    • Transfer in a greased bowl and turn to coat the top. Cover and leave it to rise for an hour.
    • Deflate dough and divide into two. Roll each half into a 14 x 9-inch rectangle. Melt 3 tablespoons of butter and brush over the loaves. Sprinkle each set evenly with 1/2 cup brown sugar, chopped dried apricots and slivered almonds.
    • Beginning from the long side, roll the dough up and seal the edges. Make 7 slices for each loaf and make two more cuts at the side of each slice. Place over a greased baking sheet and cover. Leave it to double.
    • Place it into the oven and bake at 375 degrees F for about 20 minutes. Cool over wire rack and serve.
    • Makes 14 buns.
