    Applesauce Raisin Loaves

    This is a bread recipe that is almost always present on the table during the holidays. It’s delicious and the kids just can’t get enough of it.

    INGREDIENTS

    * 1 1/4 cup all purpose flour
    * 1 cup quick rolled oats
    * 3/4 cup granulated sugar
    * 1 teaspoon baking powder
    * 1 teaspoon baking soda
    * 1 teaspoon salt
    * 3/4 teaspoon cinnamon (divided)
    * 1/2 teaspoon nutmeg
    * 1 1/4 cup applesauce
    * 2 eggs
    * 3/4 cup raisins
    * 1/3 cup vegetable oil
    * 1/4 cup milk
    * 2 tablespoons brown sugar
    * 2 tablespoons chopped pecans

    DIRECTIONS

    • Combine flour with oats, granulated sugar, baking powder, baking soda, salt, 1/2 teaspoon of the cinnamon and nutmeg in a large bowl.
    • Use a separate bowl to blend the applesauce together with eggs, raisins, oil and milk. Leave a well at the center of the flour mixture. Add the applesauce mixture and combine until moistened. Transfer the batter into 4 pieces of 5 1/2 x 3 x 2 1/4-inch greased mini-loaf pans.
    • Mix brown sugar, pecans and remaining 1/4 teaspoon cinnamon in a small bowl. Top over loaves and leave it baking at 350 degree for about 35 minutes. Leave it to cool over wire racks for 10 minutes. Once cool, remove from pans and cool for 5 more minutes.
    • Makes 4 loaves.
