    Almond Poppy Cake Recipe

    INGREDIENTS

    • 3 cups Flour
    • 2 cups Sugar
    • 1/2 teaspoon Salt
    • 1 teaspoon Baking powder
    • 1 1/2 cups Butter – softened
    • 1/2 cup Sour cream
    • 6 Eggs
    • 1/3 cup Amaretto or almond liqueur
    • 1/3 cup Poppy seeds

    Topping:

    1/4 c Confectioners’ sugar

    DIRECTIONS

    • Set your oven to 350 degrees F and then lightly oil a couple of bread pans.
    • Using a food blender mix the baking powder, salt, sugar and flour together before adding in the sour cream, butter and the three eggs. Set the blender to moderate speed, when the mixture starts becoming moisten increase the speed and then continue beating for a couple of minutes before adding in the eggs along with the amaretto. Toss in the poppy seeds and then reduce the speed on low setting.
    • Place the batter into the pans and then place them inside the oven. Allow them to cook for about fifty to sixty minutes and or just until the toothpick poked at the middle of the pan do not have anything sticking to it when pulled out. Allow them to cool down before taking them off the pan and into the wire rack for further cooling. Sprinkle the top with sugar.
