    Easy bun recipe inspired with a Swedish-sweet flavors.

    INGREDIENTS

    3/4 cup warm water
    1 (1/4-ounce) package active dry yeast or 2 1/4 teaspoons
    1/4 cup granulated sugar
    1 teaspoon salt
    1 3/4 cups unsifted all-purpose flour – divided use
    1 large egg
    1/4 cup (1/2 stick) butter or margarine, softened
    2/3 cup chopped blanched almonds – divided use
    3 tablespoons granulated sugar

    DIRECTIONS

    • In a large warm bowl, measure water and sprinkle with yeast. Mix to dissolve. Add ¼ cup of sugar, salt and ½ of the flour. Use an electric mixer to beat for 2 minutes over medium speed.
    • Add egg and butter, blending well. Gradually whisk in the rest of the flour just until smooth. Stir in 1/3 cups of almonds.
    • Ladle batter into greased muffin cups, filling each cup by half. Mix the rest of the almonds with 3 tablespoons of sugar and sprinkle over the cups.
    • Leave to rise in a warm place for an hour or until doubled. Bake for about 25 minutes.
    • Makes 18 muffins.
