INGREDIENTS
4 cups all-purpose flour
3 teaspoons baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
5 eggs
1 1/2 cups vegetable oil
2 cups sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 cups shredded zucchini
1 1/2 cups chopped pecans
1 cup peeled and grated apple

DIRECTIONS
- Mix flour, baking soda, cinnamon, nutmeg and salt into a large bowl.
- In a separate bowl, whisk eggs until frothy. Add the oil, sugars and vanilla, mixing well. Add mixture with the dry ingredients, stirring until moistened. Add the zucchini, pecans and apples.
- Divide the batter among three 8 x 4 x 2-inch greased loaf pans and bake at 350 degrees F for about an hour. Allow to cool for 10 minutes while in pan and transfer into wire racks to cool well.
- Makes 36 servings

INGREDIENTS
2 large unpeeled baking apples, cored and quartered
1 large orange, quartered
1 1/2 cups raisins
2/3 cup shortening
2 cups sugar
4 eggs
1 teaspoon lemon extract
4 cups all-purpose flour
2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 teaspoon salt
2/3 cup orange juice
1 cup chopped walnuts

DIRECTIONS
- Chop the apples, orange and raisins using a blender or food processor until finely chopped.
- Soften shortening and sugar together in a large mixing bowl. Add the eggs one at a time, stirring well before adding the next one. Once the mixture becomes light and fluffy, stir in the extract.
- Stir together the dry ingredients and add to the shortening mixture, alternately with the orange juice. Blend in the fruit mixture and nuts.
- Divide the batter among three 8 x 4 x 2-inch greased loaf pans. Bake for about 55 minutes at 350 degrees F. Allow to cool for 10 minutes while in pan and transfer onto wire racks for thorough cooling.
- Makes 48 servings

2 eggs

DIRECTIONS
- Beat the eggs in a mixing bowl and stir in sugar and oil.
- In a separate bowl, mix together flour, baking powder, cinnamon, baking soda and salt. Add this with the egg mixture, stirring until batter becomes thick. Mix in the apples, cranberries and walnuts.
- Pour batter into an 8 x 4 x 2-inch nonstick cooking spray coated loaf pan. Bake for about 65 minutes at 350 degrees F. Cool for about 10 minutes and transfer into a wire rack to finish cooling.
- Makes 16 servings

1 cup canned pumpkin puree

5 teaspoons milk
2 eggs
1/2 cup shredded Colby cheese

- Sprinkle the cooked bread with powdered sugar and enjoy with a serving of warm maple syrup on the side.
