    Zucchini Apple Bread

    "This will surely leave you craving for more. It’s deliciously sweet."

    INGREDIENTS

    4 cups all-purpose flour
    3 teaspoons baking soda
    1 1/2 teaspoons ground cinnamon
    1/2 teaspoon ground nutmeg
    1/4 teaspoon salt
    5 eggs
    1 1/2 cups vegetable oil
    2 cups sugar
    1 cup packed brown sugar
    1 teaspoon vanilla extract
    2 cups shredded zucchini
    1 1/2 cups chopped pecans
    1 cup peeled and grated apple

    DIRECTIONS

    • Mix flour, baking soda, cinnamon, nutmeg and salt into a large bowl.
    • In a separate bowl, whisk eggs until frothy. Add the oil, sugars and vanilla, mixing well. Add mixture with the dry ingredients, stirring until moistened. Add the zucchini, pecans and apples.
    • Divide the batter among three 8 x 4 x 2-inch greased loaf pans and bake at 350 degrees F for about an hour. Allow to cool for 10 minutes while in pan and transfer into wire racks to cool well.
    • Makes 36 servings

    Apple Orange Bread

    INGREDIENTS

    2 large unpeeled baking apples, cored and quartered
    1 large orange, quartered
    1 1/2 cups raisins
    2/3 cup shortening
    2 cups sugar
    4 eggs
    1 teaspoon lemon extract
    4 cups all-purpose flour
    2 teaspoons baking powder
    1 1/2 teaspoons baking soda
    1 teaspoon salt
    2/3 cup orange juice
    1 cup chopped walnuts

    DIRECTIONS

    • Chop the apples, orange and raisins using a blender or food processor until finely chopped.
    • Soften shortening and sugar together in a large mixing bowl. Add the eggs one at a time, stirring well before adding the next one. Once the mixture becomes light and fluffy, stir in the extract.
    • Stir together the dry ingredients and add to the shortening mixture, alternately with the orange juice. Blend in the fruit mixture and nuts.
    • Divide the batter among three 8 x 4 x 2-inch greased loaf pans. Bake for about 55 minutes at 350 degrees F. Allow to cool for 10 minutes while in pan and transfer onto wire racks for thorough cooling.
    • Makes 48 servings

    Apple Cranberry Bread

    INGREDIENTS

    2 eggs
    3/4 cup sugar
    2 tablespoons canola or vegetable oil
    1 1/2 cups all-purpose flour
    1 1/2 teaspoons baking powder
    1 teaspoon ground cinnamon
    1/2 teaspoon baking soda
    1/2 teaspoon salt
    2 cups chopped, peeled tart apples
    1 cup fresh or frozen cranberries
    1/2 cup chopped walnuts

    DIRECTIONS

    • Beat the eggs in a mixing bowl and stir in sugar and oil.
    • In a separate bowl, mix together flour, baking powder, cinnamon, baking soda and salt. Add this with the egg mixture, stirring until batter becomes thick. Mix in the apples, cranberries and walnuts.
    • Pour batter into an 8 x 4 x 2-inch nonstick cooking spray coated loaf pan. Bake for about 65 minutes at 350 degrees F. Cool for about 10 minutes and transfer into a wire rack to finish cooling.
    • Makes 16 servings

    Pumpkin Flax Quickbread

    INGREDIENTS

    2 tablespoons flax seed meal
    6 tablespoons water
    1 1/2 cups sugar
    1 cup canned pumpkin puree
    1/2 cup applesauce
    1 1/3 cups all-purpose flour
    1/3 cup whole wheat pastry flour
    1 teaspoon baking soda
    1 teaspoon ground cinnamon
    3/4 teaspoon salt
    1/2 teaspoon baking powder
    1/2 teaspoon ground nutmeg
    1/4 teaspoon ground cloves

    DIRECTIONS

    • Turn the oven on to 350 degrees F (175 degrees C). Prepare a 9 x 5-inch slightly greased loaf pan.
    • Stir flax seed meal with water. Add sugar, pumpkin and apple sauce, stirring until combined.
    • In a large bowl, combine the all-purpose flour, whole wheat flour, baking soda, cinnamon, salt, baking powder, nutmeg and cloves. Add this into the pumpkin mixture and mix well until smooth.
    • Transfer the batter into the prepared pan and bake for about 70 minutes.
    • Makes one 9×5 inch loaf

    Bacon Quiche Tarts

    INGREDIENTS

    2 (3 ounce) packages cream cheese, softened
    5 teaspoons milk
    2 eggs
    1/2 cup shredded Colby cheese
    2 tablespoons chopped green pepper
    1 tablespoon finely chopped onion
    1 (8 ounce) package refrigerated crescent rolls
    5 bacon strips, cooked and crumbled

    DIRECTIONS

    • Combine cream cheese and milk in a small mixing bowl until smooth. Add the eggs, cheese, green pepper and onion, stirring well until blended.
    • Divide the dough to 8 wedges and press onto the bottom and up to the sides of greased muffin cups.
    • use half of the bacon to sprinkle over the cups. Add egg mixture onto each cup and add the remaining bacon.
    • Bake for about 22 minutes at 375 degrees F. Do not cover. Cool slightly and serve.

    Easy Sausage Gravy and Biscuits

    INGREDIENTS

    1 (16 ounce) can refrigerated jumbo buttermilk biscuits
    1 (9.6 ounce) package Jimmy Dean® Original Hearty Pork Sausage Crumbles
    1/4 cup flour
    2 1/2 cups milk
    Salt and ground black pepper to taste

    DIRECTIONS

    • Prepare and bake the biscuits as instructed in the label.
    • In a large skillet, cook the sausage for about 6 minutes over medium heat, stirring often. Mix in the flour and gradually pour in the milk. Cook until boiling and the mixture is thick. Adjust heat to medium-low, allowing it to simmer for about 2 minutes. Stir often. Add salt and pepper to taste.
    • Separate the biscuits in half and divide 2 halves over 8 plates. Serve with toppings of 1/3 cup gravy.

    INGREDIENTS

    4 (1 inch thick) slices King’s Hawaiian® Sweet Bread
    4 large eggs
    1/2 cup milk
    1/2 teaspoon vanilla
    1/4 teaspoon ground cinnamon
    Butter or oil for frying
    Maple syrup

    DIRECTIONS

    • Cut bread into inch thick slices.
    • Beat eggs into a shallow mixing bowl, stirring it well with milk, vanilla and cinnamon.
    • Dip the bread slices in egg mixture and quickly set them to cook until evenly golden browned.
    • Sprinkle the cooked bread with powdered sugar and enjoy with a serving of warm maple syrup on the side.
    • Makes 4 servings
